I caught a mess of catfish a few weeks back and tried smoking them -- it turned out really good. Those nice oily fillets take to the process quite well. I used a dry brine with about 8 parts brown sugar to 1 part salt (by volume) with a healthy dose of garlic powder and plenty of coarse ground pepper. Finally, a generous portion of cayanne and mmm -- it is good. Also brined up some older steelhead and salmon too -- they turned out really tastey for year-old freezer fish. I also just happend to pick up a couple smallmouth themorning I was brining so I figured I'd see how smoked bass would taste -- not so good. They REALLY dried out.

Any other fish that takes well to smoking?

I hear smoked sturgeon is good. Don't keep them anymore and never tried smoking. They aren't oily but walleye and crappie might be good if you could keep them moist.
